I love sweeter styles of Riesling with zesty citrus, stone fruit and floral notes and they are a classic pairing with dishes some of that chilli heat. Today I’m making a spicy prawn and mango noodle salad.
Begin by layering rice noodles over crunchy salad leaves. Then add some strips of cucumber, some finely diced slices of radish, some mango chunks and finish with some plump and juicy prawns.
For the dressing combine chopped ginger, Bird’s eye chilli, fish sauce, sesame oil, soy sauce, lime and brown sugar.
Dress the salad and sprinkle coriander and tuck in!
